Help Installing WordPress Multiple Times

Windows Server 2008 R2.  IIS 7.0.  WordPress 3.5.1.

When I initially installed WordPress (WP) from the Web Platform Installer (WPI), I was prompted for things like the MySQL database name, database username, and user password.  In subsequent installs to create additonal WP web sites, I again went to the WPI and installed WP.  However, on these subsequent installs, I was not prompted for the databse name, etc.  Instead the install process evidently chose its own values for these such as database name "wordpress972," username "wordpressuser972," and a cryptic password.  My questions are:

1.  Am I doing the right thing by going back to the WPI to install WP again when I want to create another WP web site?

2.  How can I do the WP install such that I am prompted for the database name, etc. like I was on the first install?

3.  How can I go back and change the database name, etc. after the fact?
